What happened to the H in herb

Often when I watch TV and the show or news or whatever is from the US or Canada, I notice that you have difficulty with the H and in some cases some other letters, an example being the word herb, pronounced in most english speaking nations as HER-B not as the USA does ERB. Now some say that H should be silent, and maybe it should, however if you stick to this premis then Herbet should be pronounced Erbet, or Herd would be erd, house ouse, Horse would be ourse, however or should I say owever, in the case of H in the USA, the pronuciation is rather selective, only herb seems to be singled out, which I thinks is very unfair, either use the h or don't but to selectively use it is very unfair to the poor letter H. I would also like to know why you pronounce Emu, E-moo, this is incorrect it is pronunced EEEmyou OK. I do know that in many cases H is meant to be silent however it need to recoginised that this should be done in the correct context, like Baht or that not hat or herb or herbet.
I know its petty but at last I have this off my chest
